Exquisite sushi featuring thick-cut whale and fresh ingredients
You can enjoy dishes that highlight the excellence of the ingredients. Particularly impressive are the sushi made with exceptionally fresh ingredients, such as thick cuts of whale une, bacon, and kohada (gizzard shad) from Amakusa. Shako (mantis shrimp), zuke-style marinated lean tuna, and kuruma ebi (kuruma shrimp) are also very fresh and all exquisitely delicious. A plate of wakame and sumiso (vinegar-miso) and other delicacies pairs perfectly with sake, and you can finish the luxurious meal with tamagoyaki (Japanese omelette) and sherbet.

In 2008, 'Tatsusho' was born after separating from the long-established 'Kawasho', capturing the hearts of sushi lovers both inside and outside the prefecture. Shuji Tateishi
Born in 1970 in Nagasaki Prefecture. Raised on Iki, surrounded by abundant seas, he learned to judge fish. After 18 years of training at the sushi kappo 'Kawasho' in Fukuoka, he struck out on his own. By confronting ingredients sincerely and with sure craftsmanship born of intimate knowledge of fish, he creates clean, resonant sushi with a lingering aftertaste.
